The brewer Mérigot Adrien, cook and pastry cook are his basic training, after a long way in the hotel trade, he becomes a brewmaster. The experience and knowledge of this trade are acquired during several years of skill exchanges in a craft microbrewery in Switzerland. He deepened his technical knowledge by obtaining a university degree in brewing in France. His passion is to the creativity of a fleeting life. This is protected in the bottle to reveal its flavor at the right moment of decapping! The singing of the capsule will be the beginning of an encounter between you and the life created. It was during a trip to Japan that the identity of the Gonzo brewery was born.

To each his own technique!
Master brewer in constant evolution, I practice the Belgian brewing technique which consists in raising the maiche (malt + water) by different temperature steps. This brewing method suits me best because of its complexity, and allows me to obtain beers with a pronounced character.
